King prawns are Australia’s most famed prawn. They have an international reputation for being the highest quality prawn available worldwide. There are two different species (Melicertus plebejus and Melicertus latisulcatus), and they can be found all the way around Australia's coastline. The fishery is under management by the Australian fishery management quota assessment.
King doesn’t necessarily refer to its size but its species. Its size can be small, medium or large. King prawns have an intense flavor, are moist and have a medium-firm flesh. The flesh is translucent and tail ends are bright blue when raw.
