The Balsamic vinegar of Acetomodena comes from a family tradition dating back over one hundred years. Acetomodena works carefully and patiently to produce a range of high quality balsamic vinegars. The Acetomodena vinegar farmhouse is located in Modena, immersed in the green Modenese countryside and surrounded by its own vineyards. The new structure is a project which the Vecchi family passionately wanted to be directed towards the future, thanks in part to the extensive use of renewable energy, while at the same time maintaining roots firmly embedded within the traditions of Modena. Characterized by large viewing windows and the resulting play of light between the ancient sets of vinegar barrels, the design of the Acetaia serves to enhance the quality and sophistication of a unique product: Balsamic Vinegar of Modena.

Balsamico DOP

Obtained from the grapes of Trebbiano and Lambrusco from the provence of Modena.  Slowly fermented and aged in wooden barrels, the only process permitted by the rules of production drawn up in 1986 and received recognition in 2000 by the European Community. Two products are available in this category: Affinato and Extravecchio.

Goccia Oro Amb IGP

A strong, full bodied, mature and balanced Balsamic Vinegar of Modena IGP with a high proportion of sweet cooked grape must and a small amount of wine vinegar. Goccia Oro has been aged in oak, chestnut and cherry barrels.  Thick and dense, a great 'all-rounder' for the kitchen for vegetables, legumes, cheeses and meats.

A typical and ancient product, a sugary syrup obtained from the slow, prolonged cooking of fine grape must over an open fire. Recently rediscovered by chefs, it is used to sweeten preparations of confectionary and is also ideal for marinades and seasonings.

The result of a careful blend of cooked white trebbiano grape must and fine white wine vinegar, aged in oak barrels.  Condimento Bianco, White Balsamic Dressing, is delicate and balanced, commonly used for cooking white fish and crustaceans, but also great for vinaigrettes, salads and grilled chicken.

A younger balsamic that is rounded with sweet perfume notes and a delicate acidity.  This balsamic is light, fresh, and extemely versatile.

Condimento Oro Supremo

The result of the long maturation of cooked grape must of Trebbiano and Lambruso grapes which is then slowly aged in wooden barrels until sweet and dense, with a rich bouquet of flavors.  The only ingredient is cooked grape must - and a bit of patience.  It has an intense balsamic aroma and a dense, velvety texture, maintaining a lightness and versitility. Sweet and syrupy with a very low acidity.
