Jamon Serrano means 'Mountain Ham'. The name Serrano (mountain) indicates that these hams are aged on higher altitudes where the dryer and cooler condition allows the ham to age in natural climate year round. This provides the hams with the ideal climate cycles to mature and develop their robust flavor. The hams are cured for over a year, after which time the bone is removed then the ham is cured under the oversight of the ham master to ensure a consistent, firm texture. Best enjoyed sliced thin, perfect for slicing with little waste.
