Premium Squid or Calamari steaks are fillets of jumbo or Humbolt Squid, Dosidicus gigas. The squid can reach up to 6 feet in length and weigh up to 100 pounds. Fishermen catch the squid at night in the waters off the coast of Peru. The lights from the fishing vessel shine on the plankton in the water luring the squid to the surface to feed. Calamari steaks are very versatile and can be sauteed, pan fried, parboiled or grilled up quickly. The tender fillets are a delicious high-protein alternative to traditional burgers. The 4-6 oz steaks are IQF (individually quick frozen) and available by 5 pound or 30 pound cases.
