Founded in 1942 by Ottorino Ambrosi with the guiding family principle to produce, select and purvey the finest Italian cheeses.  Ambrosi supports the small producers and their production of unique, small batch cheeses.  The goal is to support these producers and their traditions to keep them alive for future generations and to share their creations with the rest of the world.  With the creation of Ambrosi Food USA in 2006, American distributors and customers now have access to a wide assortment of Italian cheeses with Ambrosi.

Blu Di Capra Goat Gorgonzola

This goat gorgonzola is produced in the Piemonte and Lombardia region of Italy.  It is a raw goat's milk cheese that is aged anywhere from 60-90 days.  Greenish blue veins run rampant throughout the yellowish paste, creating a sharp blue taste that is offset by the creaminess of the raw goat's milk.

Parmigiano Reggiano

This DOP cheese is known as the "king of cheeses" from the regions of Parma, Reggio Emilia, Modena, Bologna  and Manua, Italy.  Made exclusively of cow's milk and carefully aged for a minimum of 12 months.  The hard rind and grainy texture give way to a sophisticated taste with a pleasant, slightly herbal fragrance.

Roccolo Val Taleggio

Made from unpasturized milk produced solely from the Bruna Alpina cows.  This cheese is brined in saltwater, then left to age on pine boards in natural caves for 6 months.  Roccolo Val Taleggio has an earthy flavor with notes of mushrooms and a tangy finish.

Grana Padano

Gorgonzola Dolce

Italy's best known blue-veined cheese.  Gorgonzola Dolce is a 'sweeter', creamier and milder version of gorgonzola.  The soft, spreadable, creamy paste has bluish-green marbling throughout.
