Oysters - West Coast - Crassostrea gigas


These are grown in the heart of oyster country, down in Little Skookum inlet where the surrounding land has a much stronger influence on flavor than the sea.  Skookums are rack and bag grown to start and finished on beaches to harden the shell. They taste very buttery, slightly briny and earthy.
