Farm-raised in Katama Bay off Martha’s Vineyard, these high salinity oysters are tumbled to create greater cup definition.  The tumbler used is powered by a wind turbine.  The flavor profile of Honeysuckle oysters leads with a strong brininess and closes with a clean, bright, simple sugar finish.
