Oysters - East Coast - Crassostrea virginica

Chebooktook oysters are grown in cages suspended in the water column of Bouctouche Bay, New Brunswick, Canada.  They are finished in trays anchored to the clay and graveled floor of the bay.  These oysters have a medium cup with smooth, uniform brown shells.  They have a mild salinity with large, smooth meats and a sweet brothy finish.
