Oysters - West Coast - Crassostrea gigas

Fanny Bay


These oysters are grown in Fanny Bay on the East coast of Vancouver Island in Baynes Sound. This oyster is started using a suspension method and then transferred to the inter-tidal for hardening, and beach-cultured.  They are salty, yet sweet with a firm, plump flesh with a dark mantle.  Their thick shells make for easy opening.
