Fortune has a long relationship with the Crave family, and we’re proud to offer their range of farmstead cheeses. Some of our team recently visited the multi-generational, family-owned dairy farm and cheese factory on a tour. The event was organized by our friends at the Dairy Farmers of Wisconsin—a farmer-led organization responsible for promoting Wisconsin’s dairy industry, funding dairy-related research, and educating the public about the state’s world-class cheese and dairy offerings.

Crave Brothers Farmstead Cheese is a celebrated, multi-generational, family-owned dairy farm and cheese factory located in Waterloo, Wisconsin. The Crave family started with just 40 cows and eventually expanded to over 2,000 cows as they changed their focus from selling milk to making cheese in 2001. They just happen to have the perfect name to describe how people feel about their cheeses.

What sets the Crave Brothers apart is their true farmstead approach: milk is piped directly from their barns to the cheese plant within hours, resulting in cheeses that are rich in flavor and freshness. Their award-winning lineup includes fresh mozzarella (of all sizes and shapes), and creamy mascarpone. Their fresh mozzarella has earned top honors at major competitions, showcasing both their craft and pride in representing Wisconsin cheese culture. 

 

100% Green Power 

Sustainability is woven into the fabric of Crave Brothers. The dairy’s innovative use of on-farm renewable energy—using manure digesters to produce green power—demonstrates their commitment to minimizing environmental impact while crafting top-quality cheeses.

The entire operation is powered by the farm’s own methane-produced electricity, enough for both their facilities and hundreds of neighboring homes. They are a carbon-negative company that practices sustainable farming methods, adheres to water conservation, and packs in carbon-negative recyclable packaging. 

 

The Herd  

The Crave family embodies stewardship of the land and their Holstein herd. The cows have comfortable, healthy, and safe living environments, with 24-hour access to water and specially formulated diets designed for their specific age and maturity.  The barns are climate-controlled, so they are not too hot in the summer or cold in the winter. In the warmer months, the open ventilation, fans, and sprinkler system keep them cool. In the colder months, the barns are heated and closed. The dried, odorless fibers left over from the methane digester are used for comfortable bedding.

The ladies eat homegrown, high-quality forages consisting of corn, alfalfa, and soybeans. These pampered cows get plenty of exercise, fresh air, and individualized care, so they produce rich and nutritious milk.

Beyond superb cheese, the Crave Brothers are passionate about educating consumers on the benefits of real dairy and engaging with their community through local events, competitions, and cheese tastings. Our team left the farm with a deeper understanding of the hard work it takes to produce the cheeses we love.
