Beecher's Handmade Cheese

At the Beecher‘s Handmade Cheese shops in Seattle‘s historic Pike Place Market and New York‘s Flatiron District, visitors press their noses against the windows to witness a vat of creamy white milk transformed by the expert hands of the cheesemaker. Although he is aided in the process by simple machinery, the cheesemaker is crafting cheese using the same techniques that have been used for thousands of years.
A cheese lover since childhood, Kurt Beecher Dammeier remembers encouraging his mother to buy artisan cheese at a time when processed cheese was overtaking the market; and he recalls his great-grandfather, whose first name was Beecher, purchasing Stilton by the wheel.

Flagship {Aged 15 Months}

Cross between a cheddar and a gruyere. Cloth bound and rubbed with butter then open air cave aged at least 15 months. This has robust and nutty flavor. Great melting cheese and is able to maintain the robust flavor when used as an ingredient.

Flagship Reserve

A special version of their signature Flagship cheese.  Using raw milk, it is only made on days when the milk composition is just right.  This truckle is traditionally cloth-bound and open air aged, concentrating the flavor and producing a long finish.

Smoked Flagship 

Beecher's signature cheese that is then naturally smoked over a distinctive blend of apple and cherry wood.  The result is Flagship's robust and nutty flavor infused with the fruity essence fo natural hardwood smoke.  An American Cheese Society award winner in 2015, 2011, 2010 and 2009.

Yule Käse Truckle

A Holiday season inspired cheese.  This is a unique version of the Flagship Reserve.  The cheese is clothbound and open-air aged for 13 months.  After aging the truckle is further aged in red wine and blackberry honey.  The combination of these methods results in a cheese with flavors of nuts and honey from the Reserve, with floral tones of honey and red berries.  It is no suprise that this was the American Cheese Society 2014, 2013 and 2012 2nd place award winner.
