Sablefish, Farmed - Seremoni

Seremoni sable, Anoplopoma fimbria, AKA Pacific wild black cod, is caught live on select vessels in U.S. waters, and humanely harvested with a proprietary Ike Jime process. This humane technique quickly and skillfully processes the fish immediately after capture, which minimizes stress on the fish and preserves the flavor, texture, and nutritional value. 

 

Only the last run of the sable harvest is used for Seremoni fish, meaning they are top of the trip, last fish landed, and the freshest possible. Handled with the utmost care and rated a sustainable choice by Monterey Bay Aquarium Seafood Watch, this black cod offers buttery, velvety, vibrant translucent flesh, firm texture, delicious flavor, and a quality usually only seen in Japan. 

 

Each fish with the Sermoni Grade label is fully traceable from ocean to plate, and the production model employs a cooperative structure where fishermen are profit-sharers. This incentivizes exceptional care and quality throughout the supply chain.
