Sablefish, Anoplopoma fimbria, is commonly known as black cod, and although it resembles cod, it is not a member of the codfish family. Golden Eagle Sablefish is a premium, farm-raised sablefish based in British Columbia, Canada, recognized for pioneering the complete "egg to plate" aquaculture.
Their process begins in a state-of-the-art hatchery on Salt Spring Island, where sablefish are bred and raised from fertilized eggs through juvenile stages, ensuring optimal genetic diversity and fish health. They use advanced breeding techniques developed in collaboration with biologists and Canadian universities. Once the fish reach an appropriate size, they are transferred to low-density, ocean-based pens in the pristine, deep, and well-flushed waters of Kyuquot Sound. The Kyuquot-Checleseht First Nations, who have lived there for centuries and spent years perfecting techniques for raising healthy sablefish, work in a partnership based on mutual respect for nature and the environment, and the desire to produce the world’s best fresh sablefish.
The farm is completely integrated, and the sablefish are fully traceable; fed a diet high in omega-3 amino acids and free of antibiotics and growth hormones. Dedicated staff provide care 24 hours a day, every day of the year, and they guarantee year-round availability.
Golden Eagle Sablefish has a rich buttery flavor, firm white flesh and a balanced oil content. It has a large flake, velvety texture, and cooks up to a snowy white. It is easily prepared in a variety of cooking methods and is excellent when smoked.
