This is where the best of the best Hokkaido scallops come from, and the MSC fishery is supplemented by stock grown on land, providing a reliable and sustainable resource. The name “Hokubu” was inspired by the pristine environment that contributes to the pure white color and sweet flavor of these prized scallops. They are sustainably day boat harvested, and within hours, swiftly machine-shucked to minimize handling and preserve texture. Scallops are Individually Quick Frozen (IQF) within hours of harvest to preserve freshness, sweet flavor, and dense texture. No chemicals are used, so the natural dry, delicate texture, firm bite, and sweet, clean flavor can shine in seared and raw applications.
