Wild Goose

Grown in Narragansett Bay, Rhode Island they develop a characteristic thick, brown and white shell in the winter months.  The flavor is that of an umami, a salty ocean flavor well blended with a buttery aftertaste.  They are rack grown in bags elevated from the ocean bottom therefore a very clean, crisp “pearl for the palette.”
