Piment d'Espelette is famous for its food-friendly heat as well as its sweet red pepper perfume, bringing depth of flavor to dishes. Being of AOP designation means that this spice can only come from 10 villages in a 22 square kilometer region in and around Espelette in France. All cultivation and havest is done by hand. Once harvested the peppers are air dried, then slowly finished in a kiln according to strict AOP regulations.
