Jerez De La Frontera, Spain
Arvum is a line of sherry and sherry based vinegars produced by Aecovia, a co-op of over 500 farmers and growers established in 1989. This co-op produces all of the vinegar and the wines used in the Arvum product line in the land of Sherry, Jerez de La Frontera, just south of Seville, Spain. One of only two D.O.P.s for vinegar in the European Community (the other is Modena, for Balsamic), Jerez produces sought after vinegars in much the same way as they produce sherry wine.

Gran ReservaOne of only two D.O.P.’s for vinegar in the European Community – the other is Modena, for Balsamic – Jerez produces sought after vinegars in much the same way as they produce sherry wine. Vinegars, like the wine, are aged in a solera, a series of American oak barrels that insures consistency from year to year. The “gran reserva” designation indicates a vinegar aged for over 25 years.
