Frisian Farms Cheese

Located outside the hamlet of Pella, IA, Frisian is a small operation focused soley on the production of traditional gouda cheese. Brothers Jason and Mike Bandstra manage a herd of 80 Holstein cows, and they also operate the grain farm where they source their cow’s feed. A far cry from bland, wax dipped goudas, Frisian’s cheese reflects the tradition of farmstead goudas, a perennial favorite of cheesemongers sometimes known as “the Gouda the Dutch keep for themselves.”

 

Young Farmstead Gouda

Aged 2-4 Months. At its young age, this cheese is mild and smooth in flavor. Its texture, while semi-firm, tends toward creaminess. It is brine-washed for the first two weeks of ageing and then the cheese is turned daily and brushed to ensure even ripening and curing.

Aged Farmstead Gouda

Aged 6-12 Months. This cheese has nice flavor complexity with sweet and nutty primary notes that are balanced by hints of fruitiness and acidity in the aftertaste. The firm texture has added density and a satisfying compact mouth-feel.

Sneek

Frisian Farm's boldest of flavor cheese.  This gouda is aged 1000 days, allowing the caramel and nutty notes to deepen and the crystals to form, creating a wonderful flavor you won't want to stop eating.
