Located outside the hamlet of Pella, IA, Frisian is a small operation focused soley on the production of traditional gouda cheese. Brothers Jason and Mike Bandstra manage a herd of 80 Holstein cows, and they also operate the grain farm where they source their cow’s feed. A far cry from bland, wax dipped goudas, Frisian’s cheese reflects the tradition of farmstead goudas, a perennial favorite of cheesemongers sometimes known as “the Gouda the Dutch keep for themselves.”
