Located just 57 miles north of New York City, 5 Spoke Creamery creates its artisanal cheeses basing everything on their unifying bicycle theme. Similarly to bicycling, where you are able to observe everything around you, everything at 5 Spoke is made by hand in small batches so they can see and react to every-thing happening in front of them. Only raw milk is used from the grass-fed Holstein cows that are free from pesticides and hormones. Milking occurs at 4am, and cheesemaking at 9am, so you can be assured that this is only the freshest milk that has nowhere to travel. All cheeses are handmade in a farmstead tradition, creating cheeses that will keep your customers coming back for more.
This cheese is a cross between an aged cheddar and a Cantal Fermier. It is cave-aged for 12 months resulting in a bold and tangy cheese that is well balanced with a slightly sweet finish.
Caved-aged for 3 months the result is a creamy, mild and buttery cheese. Comparable to an English Caerphilly and a wonderful melting cheese.
Reminiscent of a traditional English Cheddar this is a wonderfully sharp and complex cheese. The 6 months spent aging in the caves bring out the sharp and tangy flavor.
Cave-aged 2 years, Browning Gold develops a natural rind dusted with powdery white mold and a creamy texture. It is buttery like a Lancashire and has the aroma of toasted nuts and brown butter.

An American Mimolette style cheese. Cheese molds have been sourced directly from France and 5 Spoke then uses its own raw milk to create this sphere shaped cheese. Harvest Moon has a bright orange interior, similar to the orange of fall leaves. This sweet and slightly tangy cheese has a hint of sweetness and notes of butterscotch that become more pronounced as it ages.
