Arctic charr is closely related to both salmon and trout and has many characteristics of both. Wild arctic charr hatch in freshwater and spend most of their adult life in brackish water found at the mouth of rivers. Fortune sources a unique strain of saltwater charr, that are environmentally sensitive, requiring specific densities and natural, unspoiled conditions that match the purity of their natural Icelandic atmosphere. Raised in land-based closed system tanks that are environmentally ideal, these charr grow in a continuously sand filtered system of pure Icelandic seawater, natural spring water, and geothermal water to maintain a perfect temperature - a saltwater environment that is unique. The charr are fed a natural organic diet, and are never exposed to chemicals or antibiotics.
Arctic charr has a mild flavor without a strong fishy taste.
The pink flesh has a meaty texture with small flakes. The high fat content and mild flavor makes Arctic charr suitable for a variety of cooking methods. Market sized fish are from 2 to 4 pounds.
